Olga D's Black Bean Dish  

1 pound cooked black beans (from dried or use rinsed canned)
1/2 cup diced red or Vidallia onion
1/4 cup diced red pepper
1/4 cup diced green pepper
1/2 cup white sweet corn
1/4 cup chopped cilantro
1/4 cup chopped jalapeno (or more for heat)

1/2 - 1 cup red wine vinegar  (depends on your taste)
2 Tbsp olive oil
1/2 cup lime juice
3 garlic cloves minced (or 3 tsp from a jar)
1 tsp black pepper
1 tsp cumin
2 Tbsp chili powder
2 Tbsp oregano
1 Tsp cayenne

Prepare beans and veggies
Mix dressing ingredients well in separate bowl
Mix all together and serve chilled

Nutritional analysis  Makes about 6 (3/4 cup servings)
For the exchange system
Count as 1 protein + 1 starch + 1 fat and a veggie
