Kay Sheppard's Potato Quiche  

ONE  9-oz raw potato shredded with skin
2 cups stir fried onions, red peppers, mushrooms and broccoli
1/8 tsp pepper
2 eggs
1/4 tsp basil
1/4 tsp sea salt

Shred potato.  Spray bottom of glass pie dish with cooking spray.  Spread the shredded potatoes on the bottom.  Bake about 15 minutes at 450 degrees until brown and crisp.  Beat eggs, combine with spices and vegetables.  Spread mixture on top of potato crust.  Bake at 400 degrees for 10 minutes

Nutritional information for 1/3 of the pie
About 135 cals
Count as 1 starch, 1 protein, 1 veggie

Feel free to change the low starch veggies around. And if you want to use 4 egg whites or 1/2 cup egg beaters instead that would work too.  Saves about 35 cals.  The counts would be the same.
