Jamie's Almond Flour Banana Muffins  

Gluten free and sugar free
OA and HOW approved

3 ripe bananas (12 oz edible portion)
1/2 cup Brummel and Brown (or other light margarine around 5g fat per Tbsp)
1 tsp Vanilla (Organic Madagascar Vanilla is what I used)
2 eggs (they were very moist, you may be able tot get away with 1)
3/4 cup STEVIA in the raw for baking (granulated splenda would probably be fine too)
1 1/2 cups almond flour (aka almond meal). This is literally ground up almonds, not any kind of flour in it at all.
1 tsp baking powder
1 tsp baking soda
1/2 tsp salt

Preheat to 350 degrees
Use a beater for the first 5 ingredients- all the wet stuff plus the stevia.  Beat until relatively smooth.
Combine the last 4 ingredients, almond flour, baking powder, baking soda and salt and give it a little stir.
Definitely use BAKING CUPS, almond flour can be a bit stickier.  I tried cooking spray and it was very sticky to the pan.  Divide into 12 equal portions
Bake for approx 30 minutes- but double check at 25 minutes
Let cool for at least 20 minutes, almond flour is a bit more delicate straight out of the over.

Makes 12 muffins

Count as 1 fruit + 2 fats for each muffin
